IOWA STATE TEAROOM TO FEATURE IOWA GROWN FOODS

AMES, Iowa -- Iowa State's Tearoom menu will feature Iowa food on Tuesday, Oct. 23. The menu includes chili con Carne, a fresh vegetable relish plate, cheddar bread and apple torte. The cost of the meal is $4.05. Reservations are required.

The Tearoom, part of the College of Family and Consumer Sciences and located in MacKay Hall, is participating with the Leopold Center for Sustainable Agriculture, which is funding a program whose purpose is to increase awareness of locally grown foods in commercial and institutional food service operations.

The chili will be made with ground beef from Mid Iowa Beef, owned and operated by Ken Williamson and Larry Shaw, Ankeny. The beans are Mrs. Grimes brand from Grimes. The spices used in the chili are from Tone's Spices, Ankeny. The vegetable plate and garden dip will use carrots, cucumbers and green peppers grown by small- to medium-sized farms that participate in the Practical Farmers of Iowa's Grower Network. The apples for the torte were grown in Cambridge at Center Grove Orchard, owned and operated by Pat Black and her family.

The Tearoom operates its own herb garden and raises most of the mint, basil and lemon balm used in the popular campus restaurant and for some of the Fine Dining Management special dinners.

The Tearoom has focused on increasing purchases from Iowa farms. It is one of nine food service operations in central Iowa participating in Leopold-funded project run by Catherine Strohbehn, adjunct assistant professor of hotel, restaurant and institution management program, and Mary Gregoire, chair of the apparel, educational studies and hospitality management department.

The Tearoom is operated by the Quantity Food Production Management class. It is a non-profit, 105-seat learning laboratory with an emphasis on educational rather than business goals that provides meal service to faculty, staff and students. Students assume responsibility for planning, preparing, and serving noon meals.
