Grivetti, professor of nutritional geography at the University of California, Davis, has been named to the Dean Helen LeBaron Hilton Endowed Chair for spring 2000 at Iowa State University. Grivetti’s research focuses on how human diets change, the mechanisms of change and the nutritional impacts of human behavior. While at ISU, Grivetti will give three public lectures. The lectures examine how the origins of various foods, such as chocolate and wine, make a nutritional significance to the American diet. His lectures are free and open to the public. On Tuesday, April 25, at 8 p.m. in the Campanile Room of the Memorial Union, Grivetti will present "Chocolate: From Montezuma to the Candy Bar and Beyond." Tuesday, May 9, at 8 p.m., he will present "Wine: Good for the Heart – Good For the Soul" at Reiman Gardens. Also at the Reiman Gardens on Tuesday, May 23, at 8 p.m. he will present "Corn and Wheat – Beef and Pork: History of Food in the American Heartland." Grivetti will also present a seminar on "GMFs and GMOs: A Cultural Perspective on Ignorance and Fear," as part of the Modern Views of Nutrition class at 4:10 p.m. April 26 in E162 Lagomarcino Hall. He will also teach both an undergraduate and graduate seminar in May. "Grivetti’s research has looked at how geography, environment and culture have affected people’s food choices, and how those choices have then affected people’s lives," Suzanne Hendrich, associate dean and professor of food science and human nutrition for the College of Family and Consumer Sciences, said. "For example, in terms of their health and their livelihood." His research interest is a blend of social and biological sciences with a historical perspective. He focuses on how and under what conditions human diets change, the mechanisms of change and the nutritional implications of human behavior. Established in 1995, the Hilton Chair was endowed by a gift of more than $1.3 million from the estate of Helen LeBaron Hilton who served as dean of the ISU College of Family and Consumer Sciences from 1952-75.
